Paleo Carrot Cake Cookies



These Paleo Carrot Cake Cookies are a delightful gluten-free, low-calorie, and vegan dessert option. Packed with wholesome ingredients like almond flour, coconut flour, and grated carrots, they offer a healthier alternative to traditional cookies.

Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup coconut sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • Pinch of salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup grated carrots
  • 1/4 cup chopped walnuts optional
  • 1/4 cup raisins optional

Instructions:

Warm the oven up to 350F 175C and put parchment paper on a baking sheet

Put coconut sugar, baking powder, cinnamon, nutmeg, ginger, and salt in a large bowl

Add the almond flour and mix them together

Add the maple syrup, vanilla extract, and melted coconut oil and mix well

Add the grated carrots, chopped walnuts if using, and raisins if using and mix until everything is well mixed

Take a tablespoon of dough and shape it into a ball

Then, flatten it out a bit to make the shape of a cookie

Leave space between each cookie when you put them on the baking sheet that has been prepared

Leave it in the oven for 12 to 15 minutes, or until the edges turn golden brown

Take it out of the oven and let it cool for 5 minutes on the baking sheet

Then, move it to a wire rack to finish cooling
