Mexican Chicken Casserole
This Mexican Chicken Casserole is a quick and easy meal that's great for busy weeknights. The salsa, spices, and melty cheese give it a lot of flavor.
Ingredients:
- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Tortilla chips for serving
Instructions:
Before you start cooking, heat the oven to 375F 190C
Shred chicken, add black beans, corn, salsa, sour cream, chopped cilantro, chili powder, cumin, salt, and pepper
Then add 1/2 cup of shredded cheddar cheese
Spread the mixture out evenly in a casserole dish that has been greased
Cover the top with the last 1/2 cup of shredded cheddar cheese
Put it in an oven that is already hot and bake for 25 to 30 minutes, or until the cheese melts and bubbles
Take it out of the oven and let it cool down a bit before you serve it
If you want, you can add more chopped cilantro as a garnish
Serve with tortilla chips
