Hummus and Veggie Collard Wrap



A healthy, gluten-free collard wrap loaded with a variety of fresh vegetables and creamy hummus. It's a filling and nutritious choice for lunch or a snack.

Ingredients:

  • 1 large collard green leaf
  • 1/4 cup hummus
  • 1/4 cup shredded carrots
  • 1/4 cup cucumber slices
  • 1/4 cup red bell pepper strips
  • 1/4 cup avocado slices
  • 1/4 cup alfalfa sprouts
  • Salt and pepper to taste

Instructions:

Wash the collard green leaf and pat it dry

Using a knife, carefully remove the thick stem from the collard leaf, making it easier to roll

Spread hummus evenly across the collard leaf, leaving about an inch of space from the edges

Layer the shredded carrots, cucumber slices, red bell pepper strips, avocado slices, and alfalfa sprouts on top of the hummus

Season with salt and pepper to taste

Fold in the sides of the collard leaf and then roll it up from the bottom, creating a tight wrap

Slice the wrap in half diagonally for easier serving, if desired

Serve immediately and enjoy your Hummus and Veggie Collard Wrap!
