Rustic Twice-Baked Potato Casserole

This twice-baked potato casserole is a hearty and comforting side dish that's great for holiday dinners or family get-togethers. Creamy mashed potatoes are mixed with chives, sour cream, and cheese. They are then baked until they bubble and turn golden brown. This recipe is sure to become a favorite among many people.

Ingredients:

  • 6 large russet potatoes, scrubbed
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/2 cup butter, melted
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh chives
  • Salt and pepper to taste

Instructions:

Preheat the oven to 400F 200C

Poke the potatoes several times with a fork and place them on a baking sheet

Bake the potatoes for about 1 hour, or until tender when pierced with a fork

Remove the potatoes from the oven and let them cool slightly

Cut each potato in half lengthwise and scoop out the flesh, leaving about a 1/4-inch shell

In a large bowl, mash the potato flesh with sour cream, milk, and melted butter until smooth

Stir in shredded cheddar cheese, grated Parmesan cheese, and chopped chives

Season with salt and pepper to taste

Spread the mashed potato mixture evenly into a baking dish

Sprinkle additional cheddar cheese on top if desired

Bake the casserole for about 20-25 minutes, or until heated through and golden brown on top

Serve hot, garnished with extra chives if desired
