Chocolate Sour Cream Cupcakes with Chocolate Frosting



Enjoy the chocolate sour cream cupcakes that are rich and moist and have luscious chocolate frosting on top. These cupcakes are great for people who love chocolate.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1 cup sour cream
  • 1/2 cup hot water
  • 1 tsp vanilla extract
  • 1 cup semisweet chocolate chips for the batter
  • 1/2 cup unsalted butter for the frosting
  • 2/3 cup unsweetened cocoa powder for the frosting
  • 3 cups confectioners' sugar for the frosting
  • 1/3 cup milk for the frosting
  • 1 tsp vanilla extract for the frosting

Instructions:

Preheat your oven to 350F 175C

Line a muffin tin with cupcake liners

In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt

In a separate large bowl, cream together the softened butter and sugar until light and fluffy

Add the eggs to the butter-sugar mixture one at a time, beating well after each addition

Stir in the vanilla extract

Alternate adding the dry ingredients and sour cream to the wet ingredients, beginning and ending with the dry ingredients

Mix until just combined

Pour in the hot water and mix until the batter is smooth

Be careful, as the batter will be thin

Stir in the semisweet chocolate chips

Divide the batter evenly among the cupcake liners, filling each about two-thirds full

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean

Remove the cupcakes from the oven and let them cool in the muffin tin for 5 minutes, then transfer them to a wire rack to cool completely

To make the chocolate frosting, melt the 1/2 cup of butter in a saucepan over low heat

Stir in the 2/3 cup of cocoa powder until smooth

Remove from heat and let it cool slightly

In a large bowl, sift the confectioners' sugar to remove any lumps

Pour the cocoa mixture into the sifted confectioners' sugar

Add the milk and vanilla extract

Beat until the frosting is smooth and reaches your desired consistency

Once the cupcakes are completely cool, frost them generously with the chocolate frosting
